‘Mojito’ Iced Green Tea

Happy 50th blog post to me!

This ‘mojito’ iced green tea is infused with mint and topped off with a fresh squeeze of lime — just simple ingredients that make for a lovely and oh so refreshing glass of goodness.  Seriously, its so refreshing… something about that fresh, crisp mint with the taste of tangy limes.  Mm.  Definitely worthy of taking the spot for Adventure. Gather. Eat.’s 50th blog post of all time.

The recipe for this drink was actually inspired by a trip to my all time favorite Des Moines coffee shop, Scenic Route Bakery.   We spend a lot of time in coffee shops so that’s saying a lot!  They have so many interesting combinations on their menu like ginger chai, basil and berry grilled cheese… oh, and mojito iced green tea, of course!




This drink recipe, along with most of my other drink recipes, is sweetened using a quick, homemade simple syrup.  Simple syrups are made of just equal parts water and sugar.  Simple, right?  What I love most about simple syrups is that they’re easily added to cold drinks without taking forever to dissolve AND you can infuse almost any flavor into them!  Lavender, grapefruit zest, vanilla… you get the idea.

I LOVE fresh herbs.  I love them so much.  Recently, I was thinking to myself that it was really silly that I was spending so much on fresh herbs from the grocery store when you can buy a live plant for just as much.  So I went out and bought some seeds from the local Wally-world, and, fingers crossed, I’ll have my own indoor herb garden a few months from now.

'Mojito' Iced Green Tea

Serves: 2 quarts
 
Ingredients
  • 6 green tea bags
  • ¼ tsp baking soda
  • ½ cup fresh lime juice / about 2 limes
  • ½ cup sugar
  • 12 mint leaves
  • extra mint leaves and lime slices for garnish
Instructions
  1. In a small sauce pan, boil 2 cups of water and pour over tea bags in a small bowl or liquid measuring cup. Add baking soda and let steep for 15 minutes.
  2. Again, in a small sauce pan, combine ½ cup sugar with ½ cup water and heat over high heat until sugar is dissolved. Remove from heat and add mint leaves to the simple syrup. Let cool for 10 minutes. Once cooled, strain out mint leaves.
  3. Combine steeped green tea with lime juice and 7 cups of cold water in a large pitcher. Add mint simple syrup to taste (I used about half). Stir well and serve over ice.
