Smashed Sweet Potatoes with Brown Butter + Thyme

Ingredients
  • 2 large sweet potatoes / cut in 1" slices
  • 1 TB olive oil
  • 3 TB butter
  • 1 clove garlic / minced
  • 3 sprigs of thyme
  • Kosher salt + black pepper
Instructions
  1. Preheat oven to 425 degrees, grease a large baking sheet with a drizzle of olive oil and set aside. Wash and slice sweet potatoes into 1" thick slices. Lightly coat sweet potatoes with olive oil and arrange on the baking sheet. Season generously with salt and pepper.
  2. Bake for 25-30 minutes until tender.
  3. While the potatoes are roasting, melt butter in a small skillet over medium heat. Continue cooking and stir with a wooden spoon until butter is foamy and little brown bits appear in the bottom of the pan.
  4. Remove from heat immediately and stir in minced garlic. Set aside.
  5. Once sweet potatoes are tender, remove from oven and let cool for 5 minutes (leaving the oven on). Lightly smash each potato round with the back of a fork. Spoon brown butter garlic mixture of each round and return to the oven.
  6. Bake for 10-15 minutes until sweet potatoes are crisp and golden.
