Buttermilk Doughnuts with Strawberry Glaze

Ingredients
  • DOUGHNUTS:
  • 1¼ cup flour
  • ¼ cup white sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 egg
  • ½ cup buttermilk
  • 2 TB butter / melted
  • 1 tsp vanilla
  • oil for frying
  • STRAWBERRY GLAZE:
  • ½ cup strawberries / chopped
  • 1 TB sugar
  • 1 TB water
  • ¾ cup powdered sugar
  • milk / as needed
Instructions
  1. Heat canola or vegetable oil in a deep fryer or sauce pot to 375 degrees F.
  2. Prepare the doughnut batter by combining all dry ingredients in a medium bowl.
  3. Add in wet ingredients and mix with a wooden spoon until just combined.
  4. Spoon into hot oil using a 1 TB sized ice cream scoop. Let cook on each side for 2 minutes until golden on all sides, flipping at least once. Work in small batches until all dough is used.
  5. For the glaze, combine strawberries, water, and sugar in a small sauce pan and heat over medium heat. Cook for 5-7 minutes until all the juices have been released. Remove from heat.
  6. Pour strawberries through a fine mesh strainer and into a small bowl. Add remaining glaze ingredients and whisk well to combine. Add milk in small amounts to reach desired consistency.
  7. Dip doughnut holes in glaze and set aside to let frosting set.
