In a small sauce pan, boil 2 cups of water and pour over tea bags in a small bowl or liquid measuring cup. Add baking soda and let steep for 15 minutes.
Again, in a small sauce pan, combine ½ cup sugar with ½ cup water and heat over high heat until sugar is dissolved. Remove from heat and add mint leaves to the simple syrup. Let cool for 10 minutes. Once cooled, strain out mint leaves.
Combine steeped green tea with lime juice and 7 cups of cold water in a large pitcher. Add mint simple syrup to taste (I used about half). Stir well and serve over ice.
